Easy Vegetarian Recipes: Vegetable Akhni

This is a delicious mixture of spices, rice, and whatever vegetables are in season.

Ingredients
5 tablespoons canola oil

1 onion, sliced finely

2 whole cinnamon sticks, 3 whole cardamoms, 4 whole black peppers, 1 teaspoon whole cumin seeds, 2 whole cloves

1 cup brussel sprouts

1 cup carrots - chopped into 2-3cm pieces

1 cup eggplant - chopped into 2-3cm pieces

1 cup potatoes - chopped into 2-3cm pieces

1/2 a red capsicum - - chopped into 2-3cm pieces 2 teaspoons salt

3 tomatoes and 1 tablespoon of tomato paste, processed together

1 teaspoon crushed garlic

1 teaspoon crushed ginger

1 teaspoon red chilli powder

1/2 teaspoon tumeric

1 teaspoon cumin powder

1.5 cups basmati rice

2 cups water

Method
  1. In a large saucepan, fry the whole spices and onion in oil, until onion is golden brown.
  2. Add chopped vegetables and cook for 10 minutes.
  3. Add tomato and tomato paste mixture.
  4. Add garlic, ginger, chilli powder, tumeric and cumin.
  5. Cook for a further 5 minutes.
  6. Add rice, salt and water to the pot.
  7. Boil for 10 minutes, then reduce to low heat and leave to simmer for 20 minutes, or until rice and vegetables are cooked through.
  8. Serve with a yoghurt and cucumber salad.
