Healthy Stir Fry For Weight Watchers

A healthy stir fry is quick and easy to preapare. There are literally hundreds of variatons that can be created with a a wide range of vegetables, making this a popular dinner choice. A little meat also goes a long way, and tender strips of beef or chicken make an ideal accompaniment to the vegetables. Ensure that you keep it healthy though, by keeping the ready-made sauces to a minimum, and following the Healthy Cooking guidelines on this website.

Healthy Stir Fry: Vegetables with Dill Fish

The recipe combines a healthy grilled fish recipe with tasty vegetables to make a delicious dish.

Ingredients
4 skinned fillets of firm white fish

3 tablespoon olive oil

A squeeze of lemon juice and salt to taste

Sprinkling of dried dill leaves

1 teaspoon crushed garlic

250g fresh green beans, cut into 3cm pieces

2 carrots, cut at an angle, into 0.5cm slices

2 zuchinni, , cut at an angle, into 0.5cm slices

250g bean sprouts

Salt and pepper to taste

Method
  1. Marinate fish in lemon juice and salt, and pan grill in 1 tablespoon of olive oil until cooked through. Remove from pan and leave aside.
  2. In the same pan, add remaining olive oil, and garlic. Fry for a few minutes.
  3. Add beans and carrot and stir fry for a few minutes.
  4. Add zuchinni and bean sprouts and fry until all vegetable are cooked, but firm to the bite.
  5. Add salt and pepper to taste.
  6. Arrange vegetables on a plate, and place fish on top. Serve hot.
