Rice Recipes: Spanish Rice

Spanish rice is a dish with a tasty, nutty flavour that is made by toasting rice in olive oil and cooking with tomatoes and vegetable or chicken stock. In this healthy version, some corn and peas have been added. This rice makes an excellent accompaniment to prawns or steak..

2 tablespoon olive oil

1 chopped onion

1 teaspoon crushed garlic

2 cups long grain rice

3 cups vegetable stock

1 cup diced fresh tomatoes

0.5 cup frozen peas

0.5 cup frozen corn kernels

1 teaspoon salt

  1. In a large saucepan, add olive oil, and fry onion and garlic till golden.
  2. Add washed rice, add salt and toast for 2-3 minutes, until rice begins to stick to pot.
  3. Add tomatoes and cooks for 5 minutes.
  4. Add vegetable stock and stir well.
  5. Bring to the boil, and then add corn and peas. Turn down heat to low.
  6. Simmer on low heat until water is absorbed and rice is cooked.
  7. Serve with grilled prawns.
