Best Roast Chicken Portuguese Style

The best roast chicken recipe you have ever tasted! This is a healthy and delicious Portuguese recipe full of flavour and bite. It makes a mouth watering dish served with the microwaved vegetables.

Ingredients
2 kg free range organic chicken

1 tablespoon crushed garlic

2 teaspoons red chilli powder

1 teaspoon salt

1 tablespoon olive oil

1 lemon, halved

Method
  1. Preheat oven to 200 degrees celsius.
  2. Clean chicken cavity well under running water, then pat dry with paper towel.
  3. Make a marinade with half the lemon, olive oil, garlic, salt and chilli powder.
  4. Season the chicken cavity and outer part by smearing the marinade all over.
  5. Place the other half of the lemon inside the chicken.
  6. Place the chicken into a roasting pan and roast for 80 minutes (20 mins per 500g of chicken)
  7. Baste with juices while the chicken is roasting
  8. Remove from oven when the chicken is golden, and juices run clear when the thigh is pierced.
  9. Serve with a variety of microwaved vegetables.
