Easy Rice Recipes For A Healthy Diet

These easy rice recipes are versatile and nutritious, and can be incorporated into a healthy diet, as long as you watch your serving size. Rice is a staple food in many parts of the world, and is included as a main meal in many cuisines in the East and West. It is equally as good as a side dish, in salads, or even in deserts. Rice recipes can be made even healthier if you substitue brown rice instead of white, or include lentils. Basmati rice has a lower glycemic index than some other types of rice, so is a healthier option.

Paella has to count among one of the most famous easy rice recipes. Paella is a Spanish rice dish that has many variations, usually being a free style combination of meat, seafood and vegetables. Key seasonings are salt, garlic and saffron (or yellow food colouring).

These recipes are suitable for people following the weight watchers program, as points values have been calculated, so they can be used as weight watchers recipes.

Ingredients
1 cup scallops

150g firm white fish pieces

12 medium prawns

2 tablespoon olive oil

1 finely chopped onion

1 teaspoon crushed garlic

3 large chopped tomatoes

1.5 cups basmati rice

1 cup frozen peas

2 cups water

1.5 teaspoon salt

pinch of saffron for colour

A few coriander leaves for garnish

Method
  1. Fry seafood in a tablespoon of olive oil, in a large frying pan until firm. Do not overcook.
  2. Remove seafood from pan. Add another tablespoon of olive oil, and fry onion, tomato and garlic utill soft.
  3. Add washed rice, salt and saffron and stir.
  4. Add water and bring to the boil, then reduce heat and simmer for 30 minutes.
  5. Add seafood and mix well.
  6. Add peas and stir through.
  7. Garnish with coriander leaves and serve.
