Easy Pasta Recipes For Weight Watchers

These easy pasta recipes are fast and versatile. Pasta comes in such a variety of shapes and sizes, and works well with so many combinations of ingredients and sauces, the possibilities are endless. Pasta is relatively low GI, but you have to control your portion sizes, and watch the fat content of your sauces to keep it healthy. An alternative is to use wholewheat pasta, which is more readily available in the supermarkets these days. To cook a pasta recipe successfully, the pasta should be cooked until it's tender but slightly firm to the bite (al-dente). Add your favourite sauce to this and garnish with herbs, for a delicious meal.

Ingredients
350g penne

4 cups chopped mushrooms

2 tablespoons olive oil

1 teaspoon crushed garlic

2 heaped tablespoons plain flour

4 cups low fat milk

1 cup reduced fat grated cheddar cheese

1 cup chopped continental parsley

salt and crushed black pepper to taste

Method
  1. In a large saucepan, bring to boil 3.5 litres of water, and add 2 teaspoons of salt.
  2. Add the penne and cook till al-dente, then drain.
  3. While the pasta is cooking, prepare the mushroom sauce.
  4. Dissolve the flour in a cup of the cold milk and leave aside.
  5. In a heavy-based frying pan, add olive oil and garlic, and cook for 2 minutes.
  6. Add mushrooms and cook for 3 minutes.
  7. Add the flour mixture, reduce the heat, and stir.
  8. Add the remaining milk gradually and keep stirring the sauce until is begins to thicken.
  9. Add the cheese, parsley, salt and pepper.
  10. Add the penne and combine well.
  11. Garnish with more parsley and cheese.
  12. Serve hot with a slice of crusty ciabatta bread.
