Healthy Vegetarian Lentil Rice Recipe

Lentil rice makes a healthy and nutritious accompaniment to curry dishes, and this recipe includes instructions for making a cluster bean curry to have with the rice. You can substitute any variety of beans to your liking and taste to have with this mung bean rice dish.

Vegetarian Recipes: Lentil Rice and Bean Curry

Lentil rice or "kitchri" is a common vegetarian recipe in Indian cuisine, which is served as an accompaniment to many different types of curries.

Ingredients
Rice:

0.5 cup basmati rice

0.5 cup mung bean lentils

1 tablespoon olive oil

2 cardomoms, 2 cloves, 1 stick cinnamon, 3 whole black peppers, 0.5 teaspoon cumin seeds

1 teaspoon salt

2 cups water

Curry: cluster beans

3 cups chopped cluster beans (Indian Guar), or other grean beans.

2 tablespoons olive oil

1 teaspoon mustard seeds

1 teaspoon salt

0.5 teaspoon tumeric

1 teaspoon crushed garlic

3 medium tomatoes, liquidised or grated

2 medium potatoes, cut into quarters

1 teaspoon cayenne pepper (red chilli powder)

1 teaspoon cumin powder

Method
Rice:

  1. Combine rice and lentils, then wash in cold water and leave to soak for 10 minutes.
  2. In a pot, add olive oil and spices and heat for 2-3 minutes until aromas are released.
  3. Add salt and water.
  4. Drain water from rice and lentils.
  5. Add rice and lentils to the pot.
  6. Boil for 10 minutes, the reduce to low heat and leave to simmer for 30 minutes, or until lentils are cooked through.
Curry:

  1. Heat olive oil in a pot and add mustard seeds.
  2. When mustard begins to splutter, add beans and salt.
  3. Add tumeric and garlic, and stir.
  4. Cook for 10 minutes, then add potatoes and tomatoes.
  5. Add cayenne pepper (red chilli) and cumin powder.
  6. Stir and leave to cook on low heat for 30-45 minutes, until beans and potatoes are soft.
  7. Garnish with coriander and serve with lentil rice, and a side salad.
