Italian Pasta Recipes

Italian pasta recipes are made from mouth watering Mediterranean ingredients such as extra virgin olive oil, sun dried tomatoes, olives, basil and baby bocconcini cheese. This pasta recipe makes for an excellent healthy, low fat and high protein meal.

Italian Pasta For Weight Watchers

Ingredients
400g penne

250g cherry tomatoes, halved

150g sun dried tomatoes, chopped

4 tablespoons extra virgin olive oil

150g pitted black olives, quartered

200g baby boocconcini cheese, sliced

1 cup basil leaves, torn

salt and crushed black pepper to taste

Method
  1. In a large saucepan, bring to boil 3.5 litres of water, and add 2 teaspoons of salt.
  2. Add the penne and cook till al-dente, then drain.
  3. While the pasta is cooking, in a pan, fry the cherry tomatoes in a little olive oil, for 5 minutes.
  4. Add sundried tomatoes and olives to the pan and stir.
  5. Drain the pasta and stir into the tomato and olive mix.
  6. Add the cheese and toss well.
  7. Garnish with basil and a drizzle of olive oil.
  8. Serve immediately
