Healthy Grilled Chicken Recipe

This healthy grilled chicken recipe is a tasty Indian flavoured dish, in which chicken tenderloins are marinated in piri piri and grilled, then topped with a yoghurt and sour cream dressing.

Piri Piri Chicken Tenderloins

Chicken breasts can be used instead of chicken tenderloins for this recipe.

Ingredients
500g chicken breast fillets cut into thick strips

Olive oil cooking spray

1 tablespoon crushed garlic

1 teaspoon crushed red chilli powder

1/4 cup vinegar 1 teaspoon salt

1 yellow capsicum, sliced

1 small avocado thinly sliced

2 tomatoes, cut into small wedges

Bunch of baby spinach leaves

1/2 cup low fat yoghurt

1/4 cup low fat sour cream

1/4 cup freshly squeezed lemon juice

1/2 teaspoon crushed garlic

Method
  1. In a large bowl, marinate the chicken with the garlic, chillis, salt and vinegar
  2. Coat the chicken well in the marinade, and leave aside in the fridge for at least 1 hour.
  3. Spray chicken fillets with olive oil and grill on a barbeque or gas grill till cooked through.
  4. Combine capsicum, avocado, tomatoes and spinach leaves in a bowl, and divide on to serving plates.
  5. Make a dressing by whisking together yoghurt, sour cream, lemon juice and garlic.
  6. Arrange chicken pieces over salad, drizzle with salad dressing, and serve.
