Healthy Banana Bread Weight Watchers Recipe

This healthy banana bread recipe is a low calorie version of traditional cafe bread, and is therefore is an ideal low fat banana bread weight watchers recipe.

Ingredients
2 eggs

3 tablespoons canola oil

1 teaspoon vanilla extract

3/4 cup brown sugar

2 cups plain flour

2 teaspoons baking powder

3/4 teaspoon bicarbonate of soda

3/4 cup low fat milk

2 large ripe mashed bananas

Method
  1. Preheat oven to 180 degrees celsius.
  2. Spray a bread pan with olive oil, and line the pan with greaseproof paper.
  3. In a bowl, sift together the flour, baking powder and bicarb.
  4. In a separate bowl, whisk the eggs, oil, vanilla, milk and sugar until fluffy.
  5. Fold the flour and bananas through, without over mixing.
  6. Spoon into the prepared pan.
  7. Bake for 45 minutes until cooked and golden brown.
