Homemade Feta and Sundried Tomato MuffinsThe combination of feta cheese and sundried tomato gives this recipe a Mediteranean flavour, and makes a good breakfast treat. In this recipe, to add a healthy twist, the fibre content has been increased by substituting rolled oats for some of the plain flour.

Ingredients1.5 cups plain flour0.5 cup rolled oats 2 teaspoons baking powder 100g reduced fat feta cheese 1 cup grated reduced fat cheddar cheese 0.5 cup chopped onion chives 0.5 cup chopped sun dried tomatoes 2 eggs 2 tablespoons olive oil 1 cup low fat milk A pinch of salt to taste
