Homemade Feta and Sundried Tomato Muffins

The combination of feta cheese and sundried tomato gives this recipe a Mediteranean flavour, and makes a good breakfast treat. In this recipe, to add a healthy twist, the fibre content has been increased by substituting rolled oats for some of the plain flour.

Ingredients
1.5 cups plain flour

0.5 cup rolled oats

2 teaspoons baking powder

100g reduced fat feta cheese

1 cup grated reduced fat cheddar cheese

0.5 cup chopped onion chives

0.5 cup chopped sun dried tomatoes

2 eggs

2 tablespoons olive oil

1 cup low fat milk

A pinch of salt to taste

Method
  1. Preheat oven to 160 degrees celsius.
  2. Spray a muffin pan with olive oil.
  3. In a bowl, combine flour, rolled oats, baking powder, crumbed feta, cheddar cheese, chives and sun dried tomatoes.
  4. In a separate bowl, whisk the egg, olive oil, milk and salt.
  5. Add the egg mixture to the flour mixture and combine
  6. Spoon into the prepared tray.
  7. Bake for 45 minutes until cooked and golden brown.
